Ingredients

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 egg
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix flour, sugar, baking powder, and salt.
- Add cold butter and mix until crumbly.
- In another bowl, combine cream, lemon zest, lemon juice, and egg.
- Pour wet ingredients into dry ingredients and mix gently.
- Turn dough onto a floured surface and knead lightly.
- Shape into a circle about 1 inch thick.
- Cut into wedges and place on a baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Let cool before serving.

- For a dairy-free version, substitute butter with coconut oil and cream with almond milk.
- Use gluten-free flour for a gluten-free option.
- Try adding poppy seeds for extra flavor.
