A comforting make-ahead enchilada casserole that is easy to prepare and perfect for sharing.
Ingredients

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 1 cup corn
- 2 cups shredded cheese
- 12 corn tortillas
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Add black beans, corn, chili powder, cumin, salt, and pepper. Stir well.
- Spread a little enchilada sauce on the bottom of a baking dish.
- Layer four tortillas, then half of the beef mixture, and one-third of the cheese.
- Repeat layers, ending with tortillas and enchilada sauce on top.
- Sprinkle remaining cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 10 minutes until cheese is bubbly.
- Let cool for a few minutes before serving.
Notes
- Try using ground turkey or chicken for a lighter option.
- Use gluten-free tortillas for a gluten-free version.
- Feel free to add vegetables like bell peppers or zucchini.
- This dish can be made a day in advance and stored in the refrigerator.
