Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 cup corn
  • 2 cups shredded cheese
  • 12 corn tortillas
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add black beans, corn, chili powder, cumin, salt, and pepper. Stir well.
  4. Spread a little enchilada sauce on the bottom of a baking dish.
  5. Layer four tortillas, then half of the beef mixture, and one-third of the cheese.
  6. Repeat layers, ending with tortillas and enchilada sauce on top.
  7. Sprinkle remaining cheese on top.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake for another 10 minutes until cheese is bubbly.
  10. Let cool for a few minutes before serving.

  • Try using ground turkey or chicken for a lighter option.
  • Use gluten-free tortillas for a gluten-free version.
  • Feel free to add vegetables like bell peppers or zucchini.
