			- 2 cups leftover cooked rice
 - 1 cup mixed vegetables (frozen or fresh)
 - 2 eggs
 - 2 tablespoons soy sauce
 - 1 tablespoon oil
 - Salt and pepper to taste
 
Instructions
- Heat oil in a pan over medium heat.
 - Add mixed vegetables and cook until tender.
 - Push vegetables to one side of the pan.
 - Crack eggs into the pan and scramble them.
 - Add leftover rice to the pan and mix everything together.
 - Pour soy sauce over the mixture and stir well.
 - Season with salt and pepper.
 - Cook for another 2-3 minutes until heated through.
