Ingredients

  • 6 cups beef broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup pasta (optional)
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
  2. Form the mixture into small meatballs.
  3. In a large pot, heat beef broth over medium heat.
  4. Add the carrots, celery, and onion to the pot.
  5. Once the broth is simmering, drop meatballs into the pot.
  6. Add diced tomatoes and pasta if using.
  7. Cook for 20 minutes until meatballs are cooked through and vegetables are tender.
  8. Garnish with fresh parsley before serving.
