Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 6 cups beef broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 cup pasta (optional)
- Fresh parsley for garnish
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
- Form the mixture into small meatballs.
- In a large pot, heat beef broth over medium heat.
- Add the carrots, celery, and onion to the pot.
- Once the broth is simmering, drop meatballs into the pot.
- Add diced tomatoes and pasta if using.
- Cook for 20 minutes until meatballs are cooked through and vegetables are tender.
- Garnish with fresh parsley before serving.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- Use gluten-free breadcrumbs for gluten-free version.
- Adjust vegetables based on preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
