A refreshing and colorful Mediterranean pasta salad, perfect for a light meal or side dish.
Ingredients

- 8 oz of rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Add the cooked pasta to the bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- You can use gluten-free pasta if needed.
- Substitute feta with vegan cheese for a dairy-free option.
- Add grilled chicken or chickpeas for extra protein.
