Description

A comforting Mexican chicken burrito casserole that’s easy to prepare and perfect for sharing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cooked chicken, rice, black beans, corn, salsa, taco seasoning, and half of the cheese.
  3. Grease a baking dish with olive oil.
  4. Pour the mixture into the baking dish.
  5. Top with the remaining cheese.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

  • You can substitute quinoa for rice for a healthier option.
  • Use ground turkey instead of chicken if preferred.
  • For a vegetarian version, omit the chicken and add more beans or vegetables.
