A comforting Mexican chicken burrito casserole that’s easy to prepare and perfect for sharing.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cooked chicken, rice, black beans, corn, salsa, taco seasoning, and half of the cheese.
- Grease a baking dish with olive oil.
- Pour the mixture into the baking dish.
- Top with the remaining cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- You can substitute quinoa for rice for a healthier option.
- Use ground turkey instead of chicken if preferred.
- For a vegetarian version, omit the chicken and add more beans or vegetables.
