  • 2 cloves garlic, minced

  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan option)
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the cut sides and sprinkle with salt and pepper.
  4. Place the squash cut side down on a baking sheet and bake for 40-45 minutes.
  5. While the squash is baking, heat a pan over medium heat and sauté garlic until fragrant.
  6. Add marinara sauce to the pan and simmer for 5-10 minutes.
  7. Once the squash is done, let it cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
  8. Toss the squash strands with the sauce and cheese.
