A comforting recipe for minced wallaby and sweet potato pies that are easy to prepare.

- 500g minced wallaby
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon tomato paste
- 1 cup beef or vegetable broth
- 1 sheet puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 200°C (400°F).
- In a pot, boil sweet potatoes until tender, about 15 minutes. Drain and mash.
- In a skillet, heat olive oil over medium heat. Add onion and garlic. Sauté until soft.
- Add minced wallaby, thyme, salt, and pepper. Cook until browned.
- Stir in tomato paste and broth. Simmer for 10 minutes.
- Combine the meat mixture with the mashed sweet potatoes.
- Roll out the puff pastry and cut into circles.
- Place a spoonful of filling on one half of each pastry circle.
- Fold over and seal the edges with a fork.
- Brush tops with beaten egg.
- Bake for 25 minutes or until golden brown.
Notes
- You can substitute minced wallaby with minced beef or lamb.
- For a vegetarian option, use lentils instead of meat.
- Feel free to add other vegetables like carrots or peas.
