Description

A comforting recipe for minced wallaby and sweet potato pies that are easy to prepare.


Ingredients

  • 500g minced wallaby
  • 2 medium sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 1 cup beef or vegetable broth
  • 1 sheet puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a pot, boil sweet potatoes until tender, about 15 minutes. Drain and mash.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic. Sauté until soft.
  4. Add minced wallaby, thyme, salt, and pepper. Cook until browned.
  5. Stir in tomato paste and broth. Simmer for 10 minutes.
  6. Combine the meat mixture with the mashed sweet potatoes.
  7. Roll out the puff pastry and cut into circles.
  8. Place a spoonful of filling on one half of each pastry circle.
  9. Fold over and seal the edges with a fork.
  10. Brush tops with beaten egg.
  11. Bake for 25 minutes or until golden brown.

Notes

  • You can substitute minced wallaby with minced beef or lamb.
  • For a vegetarian option, use lentils instead of meat.
  • Feel free to add other vegetables like carrots or peas.
