Description

A simple and comforting one-pan lemon garlic chicken with vegetables recipe.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 red bell pepper, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Add chicken thighs to the bowl and coat them well with the marinade.
  4. Place the marinated chicken in a large baking dish.
  5. Add broccoli, cherry tomatoes, and red bell pepper around the chicken.
  6. Drizzle any remaining marinade over the vegetables.
  7. Bake for 30-35 minutes or until the chicken is cooked through.
