- 1 lb chicken thighs, boneless and skinless
- 2 cups rice
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup peas, frozen
- 1 onion, chopped
- 2 cloves garlic, minced

- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and minced garlic. Sauté until soft.
- Add chicken thighs. Cook until browned on all sides.
- Stir in rice, carrots, and peas.
- Pour in chicken broth. Add salt, pepper, and thyme.
- Bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes.
- Check if rice is cooked and chicken is tender. Fluff with a fork before serving.
Notes
- You can substitute chicken with tofu for a vegetarian option.
- Use vegetable broth instead of chicken broth for a vegan version.
- Feel free to add other vegetables like bell peppers or zucchini.
