Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 more minute.
- Pour in the vegetable broth and add diced tomatoes, kidney beans, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add chopped spinach and cook for another 5 minutes.
- Taste and adjust seasoning if necessary.

- Substitute spinach with kale or Swiss chard.
