Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 more minute.
  4. Pour in the vegetable broth and add diced tomatoes, kidney beans, oregano, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add chopped spinach and cook for another 5 minutes.
  7. Taste and adjust seasoning if necessary.

Notes

  • You can use any beans you have on hand.
  • Substitute spinach with kale or Swiss chard.
  • Add cooked chicken or turkey for extra protein.
