- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/4 teaspoon salt
- Additional powdered sugar for coating
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix well.
- Gradually add the flour, chopped pecans, and salt. Mix until combined.
- Roll the dough into small balls, about 1 inch in size.
- Place the balls on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the bottoms are lightly browned.
- Remove from the oven and let cool slightly.
- While warm, roll the cookies in powdered sugar.
- Allow to cool completely before storing in an airtight container.
Notes
- For a gluten-free option, replace all-purpose flour with a gluten-free flour blend.
- Use walnuts or almonds instead of pecans for a different flavor.
- Store cookies in a cool, dry place.
