Instructions

  2. In the bacon fat, sauté onion until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil.
  4. Reduce heat and let it simmer for 15-20 minutes until potatoes are tender.
  5. Use a potato masher to mash some of the potatoes for a creamy texture.
  6. Stir in milk and season with salt and pepper.
  7. Top with crispy bacon and chives before serving.
