Description
A comforting potato pizza casserole that combines the best of both worlds.
Ingredients

			- 4 cups of diced potatoes
 - 1 cup of pizza sauce
 - 2 cups of shredded mozzarella cheese
 - 1 cup of sliced pepperoni
 - 1 teaspoon of Italian seasoning
 - Salt to taste
 - Pepper to taste
 
Instructions
- Preheat your oven to 375°F (190°C).
 - In a large pot, boil the diced potatoes for about 10 minutes or until tender. Drain and set aside.
 - In a casserole dish, layer half of the boiled potatoes at the bottom.
 - Spread half of the pizza sauce over the potatoes.
 - Add half of the mozzarella cheese and half of the pepperoni.
 - Repeat the layers with the remaining potatoes, sauce, cheese, and pepperoni.
 - Sprinkle Italian seasoning, salt, and pepper on top.
 - Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
 - Let it cool for a few minutes before serving.
 
Notes
- You can use sweet potatoes for a healthier option.
 - Try adding your favorite vegetables like bell peppers or mushrooms.
 - For a vegetarian version, skip the pepperoni and add more veggies.
 - This dish can be made ahead and stored in the fridge for up to 3 days.
