- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons milk
- Chocolate chips or candy eyes for decoration
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, sugar, brown sugar, and vegetable oil.
- Add eggs and vanilla extract. Mix until well combined.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the pumpkin mixture. Stir until just combined.
- Pour the batter into greased cupcake molds, filling them halfway.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let them cool completely.
- In a small bowl, mix powdered sugar and milk to make a glaze.
- Dip the tops of the cooled cakes in glaze and decorate with chocolate chips or candy eyes.
Notes
- For gluten-free, substitute all-purpose flour with a gluten-free blend.
- Use applesauce instead of oil for a lower fat option.
- Make sure to let the cakes cool before glazing.
- Store leftovers in an airtight container for up to 3 days.
