Ingredients

- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together softened butter, sugar, and brown sugar.
- Add the pumpkin puree, egg, and vanilla. Mix well.
- In another bowl, combine flour, baking powder, pumpkin pie spice, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir until combined.
- If using, fold in chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow cookies to cool on a wire rack.
