- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup butter, softened
- 1 egg
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon

- 1/4 tsp cloves
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 cup white chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- In another bowl, cream the softened butter and sugar together.
- Add the pumpkin puree, egg, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- If using, fold in the white chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

- Use coconut oil instead of butter for a dairy-free version.
