- 2 packets of ramen noodles
- 4 cups of chicken or vegetable broth
- 1 cup of sliced mushrooms
- 1 cup of spinach
- 2 green onions, chopped
- 2 eggs
- 2 tablespoons of soy sauce
- 1 teaspoon of sesame oil
Instructions
- Boil water in a pot and cook the ramen noodles according to package instructions.
- In a separate pot, heat the broth over medium heat.
- Add mushrooms and cook until they soften.
- Stir in spinach, soy sauce, and sesame oil.
- Once noodles are cooked, drain and add them to the broth mixture.
- In a small pot, boil water and gently add the eggs. Cook for 6-7 minutes for soft-boiled eggs.
- Peel the eggs and slice them in half.
- Serve the ramen in bowls and top with green onions and egg halves.
Notes
- You can use gluten-free noodles if needed.
- Feel free to add your favorite vegetables.
- Adjust the soy sauce for lower sodium options.
