Ingredients

  • 2 packets of ramen noodles
  • 4 cups of chicken or vegetable broth
  • 1 cup of sliced mushrooms
  • 1 cup of spinach
  • 2 green onions, chopped
  • 2 eggs
  • 2 tablespoons of soy sauce
  • 1 teaspoon of sesame oil

Instructions

  1. Boil water in a pot and cook the ramen noodles according to package instructions.
  2. In a separate pot, heat the broth over medium heat.
  3. Add mushrooms and cook until they soften.
  4. Stir in spinach, soy sauce, and sesame oil.
  5. Once noodles are cooked, drain and add them to the broth mixture.
  6. In a small pot, boil water and gently add the eggs. Cook for 6-7 minutes for soft-boiled eggs.
  7. Peel the eggs and slice them in half.
  8. Serve the ramen in bowls and top with green onions and egg halves.
