- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, broccoli, bell peppers)
- 1 cup mushrooms, sliced
- 1 cup tofu, cubed
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Start by heating the vegetable broth in a large pot over medium heat.
- Add the garlic and ginger, and sauté for 2 minutes until fragrant.
- Stir in the mixed vegetables and mushrooms. Cook for 5-7 minutes until they begin to soften.
- Add the cubed tofu to the pot.
- Pour in the soy sauce and sesame oil. Stir well.
- Simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve warm and enjoy your comforting soup.

- Feel free to substitute any vegetables you prefer.
- For a spicier version, add chili flakes.
