Ingredients

  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef pieces and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot, cooking until softened.
  5. Return beef to the pot and add broth, carrots, potatoes, salt, pepper, thyme, Worcestershire sauce, and bay leaf.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 1.5 to 2 hours, until meat is tender.
  8. Remove bay leaf before serving.
