- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef pieces and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic to the pot, cooking until softened.
- Return beef to the pot and add broth, carrots, potatoes, salt, pepper, thyme, Worcestershire sauce, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours, until meat is tender.
- Remove bay leaf before serving.
Notes
- You can substitute beef with chicken for a lighter option.
- Use vegetable broth for a vegetarian version.
- Add more vegetables like peas or green beans for extra nutrition.
