Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups vegetables (carrots, potatoes, or your choice)
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. Rub the olive oil over the chicken and season it with salt, pepper, garlic powder, and onion powder.
  4. Place the vegetables in a roasting pan and pour the chicken broth over them.
  5. Put the chicken on top of the vegetables in the roasting pan.
  6. Cover the pan with foil and bake for 1 hour.
  7. Remove the foil and bake for an additional 30 minutes until the chicken is golden brown and cooked through.
  8. Let the chicken rest for 10 minutes before carving.

  • You can substitute olive oil with butter or any cooking oil.
  • Feel free to use any vegetables you enjoy or have on hand.
  • For a spicier flavor, add paprika or cayenne pepper to the seasoning.
