Ingredients

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups vegetables (carrots, potatoes, or your choice)
- 1 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken under cold water and pat it dry with paper towels.
- Rub the olive oil over the chicken and season it with salt, pepper, garlic powder, and onion powder.
- Place the vegetables in a roasting pan and pour the chicken broth over them.
- Put the chicken on top of the vegetables in the roasting pan.
- Cover the pan with foil and bake for 1 hour.
- Remove the foil and bake for an additional 30 minutes until the chicken is golden brown and cooked through.
- Let the chicken rest for 10 minutes before carving.
Notes
- You can substitute olive oil with butter or any cooking oil.
- Feel free to use any vegetables you enjoy or have on hand.
- For a spicier flavor, add paprika or cayenne pepper to the seasoning.
