Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook for another minute.
  4. Pour in the vegetable broth and add the diced tomatoes.
  5. Stir in thyme and basil.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add mixed vegetables and cook for another 10 minutes.
  8. Season with salt and pepper to taste.
