Ingredients

  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable broth over medium heat.
  2. Add garlic and ginger, sauté for 2 minutes.
  3. Add mixed vegetables and tofu to the pot.
  4. Stir in soy sauce and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Season with salt and pepper.
  7. Garnish with green onions before serving.
