Ingredients

- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, bok choy, mushrooms)
- 1 cup tofu, cubed
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add garlic and ginger, sauté for 2 minutes.
- Add mixed vegetables and tofu to the pot.
- Stir in soy sauce and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Season with salt and pepper.
- Garnish with green onions before serving.
Notes
- You can substitute vegetable broth with chicken broth for added flavor.
- Use any seasonal vegetables you prefer.
- For a spicier version, add a pinch of red pepper flakes.
