Ingredients

- 2 cups of rice
- 4 cups of water or broth
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 cup of frozen peas
- Salt to taste

Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until they soften.
- Add the bell pepper and cook for a few minutes.
- Stir in the rice, coating it with the oil and vegetables.
- Pour in the water or broth, add salt and pepper, and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 18-20 minutes until the rice is tender.
- Add the frozen peas, stir, and let sit covered for an additional 5 minutes.
- Fluff the rice with a fork before serving.
Notes
- You can substitute brown rice for white rice; just adjust the cooking time.
- For a vegetarian option, use vegetable broth.
- Add cooked chicken or shrimp for extra protein.
