- 1 pound Italian sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups fresh spinach
- 1 package (9 ounces) cheese tortellini
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, cook the sausage over medium heat until browned. Break it apart as it cooks.
- Add the chopped onion and minced garlic. Sauté until the onion is soft.
- Pour in the chicken broth and add the diced tomatoes with their juice.
- Bring the mixture to a boil.
- Stir in the tortellini and Italian seasoning. Cook for about 5-7 minutes, or until the tortellini is tender.
- Add the fresh spinach and cook until wilted.
- Season with salt and pepper to taste. Serve hot.

- Substitute turkey sausage for a lighter option.
- Use vegetable broth for a vegetarian version.
