Ingredients

  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth

  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Sauté until vegetables soften, about 5 minutes.
  4. Stir in garlic and cook for 1 minute.
  5. Add lentils, broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer for 30-40 minutes, until lentils are tender.
  7. Remove bay leaf before serving.
  8. Adjust seasoning if needed and enjoy warm.
