Ingredients

- 1 cup dried green or brown lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Sauté until vegetables soften, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add lentils, broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 30-40 minutes, until lentils are tender.
- Remove bay leaf before serving.
- Adjust seasoning if needed and enjoy warm.

- Substitute vegetable broth with chicken broth for non-vegetarian option.
- Add spinach or kale for extra nutrients.
