Ingredients

- 1 lb mixed seafood (shrimp, scallops, and fish)
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- 2 cups diced potatoes
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced carrots
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, celery, and carrots until tender.
- Add garlic and thyme, cook for another minute.
- Pour in the broth and add potatoes. Cook until potatoes are soft.
- Add seafood and cook until just cooked through, about 5 minutes.
- Stir in heavy cream and season with salt and pepper. Heat through.
Notes
- You can substitute heavy cream with coconut milk for a dairy-free option.
- Use frozen seafood if fresh is not available.
- Feel free to add your favorite vegetables like corn or peas.
