Ingredients

  • 1 cup crab meat
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 cup sour cream
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, heat olive oil over medium heat.
  3. Add shrimp and cook until pink.
  4. Stir in crab meat, cumin, and garlic powder.
  5. Warm tortillas in a microwave for 30 seconds.
  6. Spoon seafood mixture into each tortilla and roll up.
  7. Place enchiladas in a baking dish.
  8. Mix sour cream and salsa together and pour over enchiladas.
  9. Sprinkle cheese on top.
  10. Bake for 20 minutes until bubbly.
