- 1 cup shrimp, peeled and deveined
- 1 cup crab meat
- 1 cup shredded cheese
- 8 corn tortillas
- 1 cup sour cream
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F.
- In a skillet, heat olive oil over medium heat.
- Add shrimp and cook until pink.
- Stir in crab meat, cumin, and garlic powder.
- Warm tortillas in a microwave for 30 seconds.
- Spoon seafood mixture into each tortilla and roll up.
- Place enchiladas in a baking dish.
- Mix sour cream and salsa together and pour over enchiladas.
- Sprinkle cheese on top.
- Bake for 20 minutes until bubbly.
