- 2 pounds boneless chicken thighs
- 1 cup butter
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream
- 2 tablespoons garam masala
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon lemon juice
- Fresh cilantro for garnish
Instructions
- Place chicken thighs in the slow cooker.
- Add chopped onion, minced garlic, and grated ginger.
- Pour in crushed tomatoes and stir in garam masala, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Once cooked, remove chicken and shred it.
- Stir in heavy cream and lemon juice.
- Add shredded chicken back to the slow cooker.
- Garnish with fresh cilantro before serving.
Notes
- You can use chicken breast instead of thighs for a leaner option.
- For a dairy-free version, replace heavy cream with coconut milk.
- Serve with rice or naan for a complete meal.
