- 4 chicken thighs
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Season the chicken with salt and pepper.
- In a pan, heat olive oil over medium heat and brown the chicken on both sides.
- Place the diced potatoes, onion, and garlic in the slow cooker.
- Add the browned chicken on top of the vegetables.
- Pour the chicken broth over everything.
- Sprinkle thyme on top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Check that the chicken is cooked through before serving.

- You can substitute chicken thighs with chicken breasts if preferred.
- Use sweet potatoes instead of regular potatoes for a different flavor.
