Instructions
- Place the chicken breasts in the slow cooker.
- Add the chicken broth, mixed vegetables, onion, garlic, thyme, salt, and pepper.
- Drizzle olive oil over the top.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- If you prefer a thicker sauce, mix cornstarch with a little water and stir it into the slow cooker 30 minutes before serving.
- Serve hot with rice or bread.
