- 2 pounds beef stew meat, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Brown the beef in a skillet over medium heat.
- Transfer the beef to the slow cooker.
- Add the broth, carrots, potatoes, onion, garlic, tomato paste, thyme, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check the meat for tenderness; it should be easy to shred with a fork.
- Serve hot and enjoy your meal.
Notes
- For a vegetarian option, substitute beef with mushrooms and use vegetable broth.
- Feel free to add any other vegetables you enjoy, like peas or green beans.
- Leftovers can be stored in the fridge for up to three days.
