Ingredients

- 2 pounds of small potatoes
- 1/4 cup of olive oil
- 3 cloves of garlic, minced
- Salt to taste
- Black pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and place them in a large pot. Cover with water and add a pinch of salt.
- Bring the water to a boil and cook the potatoes until tender, about 15-20 minutes.
- Drain the potatoes and let them cool for a few minutes.
- On a baking sheet, place the potatoes and gently smash each one with a fork or the bottom of a cup.
- Drizzle olive oil over the smashed potatoes, and sprinkle with minced garlic, salt, and pepper.
- Bake in the oven for 20-25 minutes until crispy and golden.
- Garnish with fresh herbs if desired and serve warm.
Notes
- You can substitute olive oil with melted butter or vegetable oil.
- Use any herbs you prefer, such as rosemary or parsley.
- Feel free to add cheese on top during the last few minutes of baking.
