Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • 1 cup cooked beans (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, carrots, and celery. Sauté for about 5 minutes until soft.
  3. Stir in minced garlic and cook for another minute.
  4. Add vegetable broth, diced tomatoes, thyme, bay leaf, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add chopped kale or spinach and cooked beans if using. Cook for an additional 5 minutes.
  7. Remove bay leaf before serving.

Notes

  • Substitute olive oil with butter for a richer flavor.
  • Use any vegetables you have on hand.
