- 2 medium sweet potatoes, diced

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic. Sauté until soft.
- Add ground beef. Cook until browned, breaking it apart as it cooks.
- Add diced sweet potatoes and cook for about 5 minutes until they start to soften.
- Stir in black beans, corn, chili powder, cumin, paprika, salt, and pepper.
- Cover and cook for about 15 minutes, stirring occasionally, until sweet potatoes are tender.
