- 1 cup bell peppers, diced
- 1 cup onion, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add the diced onions and bell peppers. Cook until they are soft.
- Stir in the black beans, corn, and diced tomatoes.
- Add chili powder, cumin, salt, and pepper. Mix well.
- Let it simmer for about 10 minutes, stirring occasionally.
- If desired, sprinkle cheese on top and let it melt.
- Serve warm and enjoy.
