Ingredients

- 1 cup dried split peas
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 ham hock or 1 cup diced ham
- 4 cups chicken or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water.
- In a large pot, combine the peas, onion, carrots, celery, ham hock, broth, and bay leaf.
- Bring to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for about 1 hour or until peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- You can use turkey instead of ham for a lighter option.
- For a vegetarian version, omit the ham and use vegetable broth.
- Feel free to add your favorite herbs for extra flavor.
