- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked spinach (chopped)
- 1/4 cup cooked bacon or sausage (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- In a blender, combine the eggs, cottage cheese, and cheese of your choice.
- Blend until smooth and creamy.
- Stir in the cooked spinach and bacon or sausage if using.
- Season with salt and pepper.
- Pour the mixture into silicone muffin cups or a greased baking dish.
- Bake for 25-30 minutes or until the egg bites are set.
- Allow to cool slightly before removing from the cups.
Notes
- You can use any vegetables you like such as bell peppers or mushrooms.
- For a vegetarian option, skip the meat.
- These can be stored in the fridge for up to a week.
- Reheat in the microwave for a quick breakfast.
