Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup potatoes, diced
  • 1 cup peas (fresh or frozen)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken pieces and brown on all sides.
  3. Remove chicken and set aside.
  4. Add onion, carrots, and celery to the pot. Cook until softened.
  5. Add garlic and cook for 1 minute.
  6. Return chicken to the pot.
  7. Add chicken broth, thyme, rosemary, salt, and pepper.
  8. Bring to a boil, then reduce heat and simmer for 30 minutes.
  9. Add potatoes and peas. Cook for an additional 15 minutes.
  10. Check for seasoning and adjust if necessary.
  11. Serve warm and enjoy.
