- 2 cups cooked shredded chicken
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese
- 1/2 cup chopped onion
- 1/2 cup sour cream
- 1 tablespoon olive oil
- Optional: black beans, bell peppers, or corn for added nutrition
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté until soft.
- Stir in the shredded chicken and half of the enchilada sauce, mixing well.
- Place a tortilla in the skillet, add a spoonful of the chicken mixture, and sprinkle with cheese.
- Fold the tortilla in half and repeat with remaining tortillas.
- Pour the remaining enchilada sauce over the folded tortillas.
- Cover the skillet and cook for 10 minutes, or until the cheese is melted.
- Serve hot with sour cream on top.

- You can substitute chicken with beans for a vegetarian option.
