Description
A classic strawberry shortcake made with fresh strawberries and whipped cream.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 2 cups fresh strawberries, sliced
- 1/4 cup sugar (for strawberries)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add cold butter and mix until crumbly.
- Pour in heavy cream and stir until just combined.
- Turn dough onto a floured surface and gently knead.
- Roll out to 1-inch thickness and cut into rounds.
- Place on a baking sheet and bake for 15-20 minutes.
- While cakes bake, mix sliced strawberries with sugar and let sit.
- Once cakes cool, slice them in half.
- Layer strawberries and whipped cream between the cake halves.
- Top with more strawberries and cream before serving.
Notes
- You can use gluten-free flour for a gluten-free option.
- For a lower calorie version, use low-fat yogurt instead of heavy cream.
- Frozen strawberries can work if fresh ones aren’t available.
