Ingredients

- 2 cups cooked rice
- 1 pound chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (carrots, bell peppers, peas)
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Cook rice according to package instructions and set aside.
- In a pan, heat sesame oil over medium heat.
- Add diced chicken and cook until no longer pink.
- Stir in soy sauce, mixed vegetables, salt, and pepper.
- Cook until vegetables are tender.
- Serve chicken mixture over rice and top with green onions.
