Instructions
- Prepare your rice according to package instructions.
- Grill or cook chicken until fully cooked, then dice it.
- If using fresh corn, boil or grill it until tender. If using canned, drain and rinse.
- In a large bowl, combine rice, chicken, corn, bell peppers, cilantro, and lime juice.
- Season with salt and pepper to taste.
