Ingredients

- 8 small corn tortillas
- 1/2 cup crumbled feta cheese (or queso fresco)
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a skillet over medium heat.
- Add corn, chili powder, cumin, and salt. Cook for 5-7 minutes until corn is slightly charred.
- Warm tortillas in a separate pan or microwave.
- Fill each tortilla with the corn mixture.
- Top with feta cheese and cilantro.
- Serve with lime wedges on the side.
