- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (15 oz)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground meat over medium heat until browned. Drain excess fat.
- Add onion and garlic to the skillet. Cook until soft.
- Add cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Stir to combine.
- Fill each bell pepper with the meat mixture.
- Place the stuffed peppers in a baking dish. If using, sprinkle cheese on top.
- Add a little water to the bottom of the dish to help steam the peppers.
- Bake for 30-35 minutes until peppers are tender.
- Let cool for a few minutes before serving.
