  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (15 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground meat over medium heat until browned. Drain excess fat.
  4. Add onion and garlic to the skillet. Cook until soft.
  5. Add cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Stir to combine.
  6. Fill each bell pepper with the meat mixture.
  7. Place the stuffed peppers in a baking dish. If using, sprinkle cheese on top.
  8. Add a little water to the bottom of the dish to help steam the peppers.
  9. Bake for 30-35 minutes until peppers are tender.
  10. Let cool for a few minutes before serving.
