- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground turkey or beef
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, sauté the onion and garlic until soft.
- Add the ground turkey or beef and cook until browned.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Stuff the mixture into the bell peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes. Remove the foil, add cheese if desired, and bake for an additional 10 minutes.

- You can use quinoa or cauliflower rice for a low-carb option.
- Feel free to add vegetables like zucchini or spinach to the stuffing.
