- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground beef or turkey
- 1 can diced tomatoes (15 ounces)
- 1 cup shredded cheese
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until soft.
- Add ground meat to the skillet and cook until browned.
- Stir in cooked rice, diced tomatoes, salt, and pepper. Mix well.
- Fill each pepper with the meat mixture and place them in a baking dish.
- Sprinkle cheese on top of the stuffed peppers.
- Bake for 30-35 minutes until the peppers are tender.
- Let cool for a few minutes before serving.
Notes
- For a vegetarian option, use black beans instead of meat.
- You can replace rice with quinoa or couscous.
- Feel free to add vegetables like corn or spinach to the filling.
