  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes (15 ounces)
  • 1 cup shredded cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until soft.
  4. Add ground meat to the skillet and cook until browned.
  5. Stir in cooked rice, diced tomatoes, salt, and pepper. Mix well.
  6. Fill each pepper with the meat mixture and place them in a baking dish.
  7. Sprinkle cheese on top of the stuffed peppers.
  8. Bake for 30-35 minutes until the peppers are tender.
  9. Let cool for a few minutes before serving.
