Ingredients

- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash the mixed greens and place them in a large bowl.
- Add the cherry tomatoes, cucumber, avocado, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- Substitute feta cheese with goat cheese for a different flavor.
- Use your favorite salad greens if mixed greens are not available.
- Add grilled chicken or shrimp for extra protein.
