- 2 lbs of beef roast
- 4 cups of beef broth
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves of garlic, minced
- 1 tablespoon of salt
- 1 teaspoon of black pepper
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of rosemary
Instructions
- Preheat your oven to 350°F (175°C).
- Season the beef roast with salt, pepper, thyme, and rosemary.
- In a large pot, heat olive oil over medium heat. Sear the beef roast on all sides until browned.
- Add chopped onion and minced garlic to the pot and sauté until softened.
- Pour in the beef broth and bring to a simmer.
- Add carrots and potatoes to the pot.
- Cover the pot with a lid and transfer it to the oven.
- Bake for 2 to 3 hours, or until the beef is tender.
- Remove from the oven and let it rest for a few minutes before slicing.
- Serve hot with the vegetables and broth.
Notes
- You can substitute beef roast with chicken if preferred.
- Use vegetable broth for a vegetarian option.
- Add any other vegetables you enjoy, such as green beans or peas.
