Ingredients

  • 4 cups of beef broth
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of salt
  • 1 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of rosemary

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the beef roast with salt, pepper, thyme, and rosemary.
  3. In a large pot, heat olive oil over medium heat. Sear the beef roast on all sides until browned.
  4. Add chopped onion and minced garlic to the pot and sauté until softened.
  5. Pour in the beef broth and bring to a simmer.
  6. Add carrots and potatoes to the pot.
  7. Cover the pot with a lid and transfer it to the oven.
  8. Bake for 2 to 3 hours, or until the beef is tender.
  9. Remove from the oven and let it rest for a few minutes before slicing.
  10. Serve hot with the vegetables and broth.
