Description

Taco Rice is a comforting and easy dish that combines seasoned ground beef, rice, and your favorite taco toppings.


Ingredients

  • 1 lb ground beef
  • 1 cup rice
  • 2 cups beef broth or water
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup diced tomatoes
  • 1 cup lettuce, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped

Instructions

  1. In a large pan, cook the ground beef over medium heat until browned.
  2. Drain excess fat and add taco seasoning, stirring well.
  3. Add rice and beef broth (or water) to the pan.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  5. Remove from heat and let it sit for 5 minutes.
  6. Fluff rice with a fork and mix in diced tomatoes.
  7. Serve with shredded cheese, lettuce, sour cream, and green onions on top.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • Use brown rice for added nutrition, but increase cooking time.
