Description
Taco Rice is a comforting and easy dish that combines seasoned ground beef, rice, and your favorite taco toppings.

- 1 lb ground beef
- 1 cup rice
- 2 cups beef broth or water
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup diced tomatoes
- 1 cup lettuce, shredded
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
Instructions
- In a large pan, cook the ground beef over medium heat until browned.
- Drain excess fat and add taco seasoning, stirring well.
- Add rice and beef broth (or water) to the pan.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff rice with a fork and mix in diced tomatoes.
- Serve with shredded cheese, lettuce, sour cream, and green onions on top.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- Use brown rice for added nutrition, but increase cooking time.
- Vegetarians can use black beans instead of meat.
